Ingredients
1/2 broccoli head
3 large potatoes, peeled and thick sliced
red, yellow, green peppers, thinly sliced
1 leek
large knob of butter
Sauce
1 tsp dijon mustard
Cream + Creme fraiche + Milk (whatever is at hand)
Salt and black pepper
Cheddar cheese
Preparation
Boil the potatoes for 8 minutes, adding broccoli after 5 minutes.
Fry peppers on medium-high heat adding leek halfway through
Drain potatoes and broccoli and add butter in the pot while hot.
Mix in pepper and leek and the creamy sauce
Spoon out into a oven dish
Fine grate more cheddar cheese on top and place in fan oven at 175C for 15-20 minutes or until bubbling and browned on top.
