Ingredients
  • 1/2 broccoli head
  • 3 large potatoes, peeled and thick sliced
  • red, yellow, green peppers, thinly sliced
  • 1 leek
  • large knob of butter

Sauce

  • 1 tsp dijon mustard
  • Cream + Creme fraiche + Milk (whatever is at hand)
  • Salt and black pepper
  • Cheddar cheese
  • Boil the potatoes for 8 minutes, adding broccoli after 5 minutes.
  • Fry peppers on medium-high heat adding leek halfway through
  • Drain potatoes and broccoli and add butter in the pot while hot.
  • Mix in pepper and leek and the creamy sauce
  • Spoon out into a oven dish
  • Fine grate more cheddar cheese on top and place in fan oven at 175C for 15-20 minutes or until bubbling and browned on top.
