1 egg, poached
1 romaine lettuce or butterhead lettuce
Chopped cucumber
Handful of half-crushed pistachios
avocado, sweetcorn
Dressing
1 tbsp olive oil
1 tsp sherry vinegar
1 tsp dijon mustard
salt and pepper
Preparation
make the salad and poach the egg for 1-2 minutes in boiling water
mix dressing and sprinkle pistachios.
