Romaine lettuce, poached egg and pistachio salad

Ingredients
  • 1 egg, poached
  • 1 romaine lettuce or butterhead lettuce
  • Chopped cucumber
  • Handful of half-crushed pistachios
  • avocado, sweetcorn

Dressing

  • 1 tbsp olive oil
  • 1 tsp sherry vinegar
  • 1 tsp dijon mustard
  • salt and pepper
  • make the salad and poach the egg for 1-2 minutes in boiling water
  • mix dressing and sprinkle pistachios.
