Ingredients
  • 400g ramen noodles
  • 1,5 litres chicken broth (70ml concentrated + water)
  • large handful of shitake mushrooms
  • 1,5 chicken breasts cut into slices
  • 10 small radishes, sliced
  • 4 large eggs, soft boiled for 7 mins
  • 1 large garlic clove, sliced
  • 1 inch piece of ginger, sliced for the sauce
  • 4 tbsp mirin
  • 5 tbsp soy sauce
  • 1 tbsp sesame seed oil
  • 2 heaped tbsp of miso for garnish
  • fine cut spring onion
  • thinly sliced red chilli
  1. Cook the noodles and eggs for 5 mins and 7 mins respectively.
  2. Drain the noodles and leave in cold water to stop them sticking.
  3. Cool the eggs and remove shells. Season and grill the chicken pieces and cut into slices.
  4. Prepare the broth, add the mushrooms, garlic and ginger and bring to the boil.
  5. Add the pak choi stalks once boiling and simmer for 5 mins.
  6. Turn heat off and add radishes and the pak choi leaves and sauces.
  7. Remove a ladleful of broth, add miso and then return to the pot.
  8. Leave covered for 4-5 mins and serve with the egg, spring onion and chilli garnish.
