Terayaki beef noodles

Ingredients
  • 1 piece of beef steak cut in strips
  • 4 spring onions sliced lengthways
  • red, green, yellow peppers thinly sliced
  • carrot, pak choi, broccoli

Noodles 150g – 180g egg noodles

Teriyaki sauce

  • 1 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp mirin
  • 1 tbsp dry sherry
  • 2-3 crushed garlic cloves
  • 1 tsp grated ginger
  • 1 tsp sesame seed oil
  • 1/4 tsp white pepper (large pinch)
  • 1 tbsp brown sugar

Garnish

  • sesame seeds
  • chili flakes
  • spring onion cut crossways (rings)
  1. Make the sauce. Then use 2 tbsp of the sauce to marinate the beef for 30 mins
  2. Meanwhile, cook the egg noodles in lightly salted water for 5 mins. Drain and cool the noodles with cold water. mix in 1 tsp of sesame seed oil
  3. Cook the meat in a wok on high heat. Remove and set aside
  4. Cook the vegetables leaving the spring onion until last.
  5. Add the sauce and the noodles and toss together with tongs
  6. Garnish and serve
