1/2 red bell pepper and 1/2 yellow pepper, sliced into strips
Olive oil – For cooking.
Cilantro
1 lime, cut into wedges.
Seasoning – Fajita seasoning
Tortillas – White flour or corn tortillas
Preparation
Prepare vegetables: In a large bowl, combine sliced peppers, sliced onion, and 1 1/2 tbsp of fajita seasoning; toss and set aside.
Prepare pork: Clean and slice pork tenderloin into long strips. Using the remaining fajita seasoning, sprinkle over the sliced pork – ensuring each piece is well seasoned.
Cook pork: Heat the olive oil over medium-high heat in a large skillet and add the pork. Cook for 5 – 10 minutes, until it is fully cooked and slightly charred, but not burned. Once cooked, removed from skillet, and wipe skillet clean.
Cook vegetables: Heat more olive oil over medium heat in the same skillet and add the bowl of veggies. Cook for about 5 minutes, or until the onion is caramelized and the peppers are soft. Add the pork back to the skillet and cook for another 1 minute or so.
Prepare guacamole: In a separate dish, peel the avocados and mash them, adding in the tomato, lime juice, and green onion. Season with some salt and pepper to taste.
Assemble: Using the tortillas, assemble the fajita by adding the pork, veggies, and guacamole – in no particular order!
Finally, garnish with a finishing touch of cilantro, if preferred!
