Lemon curd

Ingredients
  • 2 large egg yolks
  • 70g sugar
  • 1/2 tablespoon lemon zest
  • 40ml lemon juice
  • 3 tablespoons butter (if unsalted butter, add a pinch of salt)
  1. Mix everything except for butter
  2. Heat in baño maría for 10 minutes until thick stirring continuously.
  3. Mix in butter, cool and refrigerate.
